Begin by preheating your oven to 350°F (175°C) and prepare two baking sheets by lining them with parchment paper. Take a moment to spread out the sesame seeds on a pie plate.
Take a small bowl and whisk together the almond flour, baking soda, and a pinch of salt. In a separate larger bowl, combine the honey, tahini, and a dash of vanilla extract. Blend these wet ingredients thoroughly before introducing the dry mixture. Stir diligently until the contents are harmoniously unified.
With a scoop measuring around 1 ½ inches, form small balls of the biscuit dough. Roll each ball gently in the bed of sesame seeds, allowing them to coat the exterior. Afterward, delicately flatten these balls into rounds, about 1 / 4 – inch thick. Upon completion, transfer these rounds onto the prepared baking sheets, ensuring a distance of approximately 2 inches between each piece.
Slide the baking sheets into the preheated oven and allow the biscuits to bake for roughly 8 minutes. Keep an eye on the oven and consider switching the sheets between the top and bottom racks halfway through the baking duration.
The biscuits should present a golden hue on their undersides when ready. Once achieved, gently move them to a cooling rack, allowing them time to cool before they’re ready to be enjoyed.
