Baked pears with maple, orange and pistachio crumble


3 Beurre Bosc pears, halved and cored

Juice of 3 or 4 blood oranges (or regular oranges, if you can’t source these)

1 tbsp of olive oil

1/3 cup of pure organic maple syrup

1 tsp vanilla extract

½ cup unsalted pistachio nuts, finely chopped


Preheat oven to 180 degrees, fan forced.

Cut pears in half, remove the core and arrange in a baking dish.

Combine orange juice, olive oil, maple syrup and vanilla in a bowl and mix well. Drizzle over the top of the pears.

Roast for 30 minutes, turning the pears once during the baking.  Adjust cooking to suit your oven, you want the pairs to soften and turn golden brown.

Once baked sprinkle with the nuts and serve with a good dollop of coconut yoghurt.
