INGREDIENTS
2 tsp (10 mL) olive oil
1 small onion, sliced
1 clove garlic, crushed
1 yellow capsicum, chopped
1 can cannellini butter beans
200 ml of passata or can of organic crushed tomatoes
1 tsp of paprika
2 Tbsp (30 mL) harissa paste, more to taste
¼ tsp salt
⅛ tsp ground black pepper
½ lemon, juiced
Method
Heat a large pan on medium-high heat and add the oil, onion, garlic, and capsicum. Cook for 3 – 4 minutes, until softened.
Add the beans, passata or organic crushed tomatoes, paprika and harissa, and cook for 3 – 4 minutes. Deglaze the pan with a small splash of water if necessary.
Season with salt and pepper and stir in the lemon juice.
