Smokey black bean salad: the perfect refreshing Summer salad

Summer calls for refreshing salads. Salads are an easy way to increase your plant diversity. Aim for 5-8 serves every day to optimise a diverse microbiome.

Smokey Black Bean salsa

400g jar of organic corn kernels, drained and rinsed
400g can organic black beans
200g cherry tomatoes, chopped
1 medium red capsicum
1 medium green capsicum
1 medium red onion, chopped
1 avocado
¼ cup fresh coriander, roughly chopped

Smokey Dressing

¾ cup coconut yoghurt
Zest and juice of 1 lime
1 tbsp raw honey
1 tsp ground cumin
1 tsp smoked paprika

To make the dressing whisk all the ingredients in a bowl until combined. Season to taste.

Mix the corn, beans, avocado, capsicum, tomatoes and onion in a large bowl.

Serve with lime wedges and coriander

A simple fresh lemon and olive oil dressing works well with this salad also.
