Coconut bread recipe

This is a delicious healthy cake for everyone, especially great for people following a gluten and dairy free protocol.  You will never feel like you are missing out.  Best served warm with a dollop of coconut yoghurt.

Coconut Bread

  • 6 eggs
  • 1/2 cup coconut milk
  • 1/3 cup raw organic honey
  • 1 tablespoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 3/4 cup coconut flour
  • 1/2 cup almond meal
  • 2 teaspoon baking powder
  • 1 teaspoon sea salt
  • 1/3 cup fresh or frozen raspberries or blueberries
  1. Heat the oven to 160’C.
  2. Place all ingredients (except the berry’s) in a food processor or blender and blend until smooth.
  3. Gently fold through the berrys
  4. Pour mixture into a greased 9 x 5-inch loaf pan and bake for 40–55 minutes or until a knife inserted in the center comes out clean. Using a smaller pan will require a longer baking time and result in a thicker loaf.

Scatter a few berries on top of the batter.  Enjoy!
