This is a delicious healthy cake for everyone, especially great for people following a gluten and dairy free protocol. You will never feel like you are missing out. Best served warm with a dollop of coconut yoghurt.
Coconut Bread
- 6 eggs
- 1/2 cup coconut milk
- 1/3 cup raw organic honey
- 1 tablespoon vanilla extract
- 1/4 cup coconut oil, melted
- 3/4 cup coconut flour
- 1/2 cup almond meal
- 2 teaspoon baking powder
- 1 teaspoon sea salt
- 1/3 cup fresh or frozen raspberries or blueberries
- Heat the oven to 160’C.
- Place all ingredients (except the berry’s) in a food processor or blender and blend until smooth.
- Gently fold through the berrys
- Pour mixture into a greased 9 x 5-inch loaf pan and bake for 40–55 minutes or until a knife inserted in the center comes out clean. Using a smaller pan will require a longer baking time and result in a thicker loaf.
Scatter a few berries on top of the batter. Enjoy!
